Ingredients

Pizza Ingredients
  • 1 lb Pizza dough (homemade or store-bought) For a chewier crust, use higher-hydration dough; for a crispier crust, roll thinner.
  • 2 tbsp Olive oil Extra virgin for flavor, light olive oil for higher smoke point.
  • 1 cup Pizza sauce Use jarred sauce or quick crushed tomatoes with garlic and oregano.
  • 2 cups Shredded mozzarella cheese Freshly shredded melts better than pre-shredded blends.
  • Toppings of choice (e.g., pepperoni-style vegan slices, cooked chicken, bell peppers, onions, mushrooms, olives, fresh basil) Avoid overloading to keep the crust crisp.
  • 1 cup Flour For dusting the work surface.

Method

Preparation
  1. Preheat the Blackstone griddle over medium heat for 5 to 10 minutes.
  2. Lightly flour your countertop and roll or stretch the dough to your preferred thickness, aiming for an even circle.
  3. Drizzle a thin layer of olive oil on the griddle and spread it with a spatula or brush.
Cooking
  1. Place the shaped dough on the oiled griddle and cook for 2 to 3 minutes until golden-brown on the underside.
  2. Flip the dough gently using two spatulas and immediately add pizza sauce, a generous layer of mozzarella, and your chosen toppings.
  3. Cover the pizza with a lid or large skillet and cook for another 3 to 5 minutes until the cheese melts and the crust is cooked through.
  4. Remove the pizza, let it rest for a minute, slice, and serve hot.

Notes

Slice the pizza into wedges for sharing, pair with a salad or garlic-knotted bread, and serve toppings buffet-style. Leftovers are great cold or reheated on the griddle to recrisp the crust. Store in an airtight container for up to 3 days or freeze individual slices.
