  • 1 cup shredded cheddar or Monterey Jack cheese, divided Reserve 1/4 cup for topping.
  • 1/4 cup blue cheese crumbles Optional topping.

Preparation
  1. Preheat the oven to 375°F.
  2. Soften cream cheese in a microwave safe bowl for 20 to 30 seconds until it becomes easy to stir.
  3. Stir the softened cream cheese together with the buffalo hot sauce and the ranch or blue cheese dressing until the mixture is smooth.
  4. Fold in the shredded chicken and 3/4 cup of the shredded cheese, mixing until everything is evenly coated.
  5. Spoon the mixture into an oven safe 8 inch baking dish and smooth the surface.
  6. Scatter the remaining 1/4 cup cheese and the blue cheese crumbles evenly over the top.
  7. Bake at 375°F for 8 to 10 minutes until the dip is bubbling.
  8. For a golden top, broil for 1 to 2 minutes—watch closely so it does not burn.
  9. Remove from the oven and let the dip rest for 2 to 3 minutes before serving.
