  • 4 cups fresh corn kernels (or canned/frozen) If using canned or frozen, drain or thaw before adding.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh cilantro, chopped Can substitute with fresh parsley.
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lime juice About one lime.
  • Salt and pepper to taste

Method
 

Preparation
  1. Place the corn, halved cherry tomatoes, diced red onion, diced bell pepper, and chopped cilantro in a large mixing bowl.
  2. In a separate small bowl, whisk together the olive oil, lime juice, and a pinch of salt and pepper. Mix until fully combined and taste for seasoning adjustments.
  3. Pour the dressing over the vegetable mixture. Toss gently until every piece is coated with the flavorful dressing.
  4. Cover the bowl and chill it in the refrigerator for at least 30 minutes to allow the flavors to meld beautifully. Serve it cold or at cool room temperature.
