Prepare Ingredients
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment or lightly oil it.
- Heat the olive oil in a skillet over medium heat. Add the ground beef and season lightly with salt and pepper. Cook, breaking it up, until fully browned.
- Stir in the taco seasoning plus a splash of water. Simmer for 1 to 2 minutes so the flavors combine, then remove from heat.
- Cook the tater tots according to the package directions until they are golden and crispy. Use the oven method if possible for best texture.
Assemble Burritos
- Lay one tortilla flat on a clean surface. Spoon a portion of the seasoned beef down the center. Top with a handful of crispy tater tots and a sprinkle of shredded cheddar.
- Fold the two side edges toward the center, then roll the tortilla tightly from the bottom so the seam is on the underside. Place seam-side down on the prepared baking sheet.
- Repeat the assembly with the remaining tortillas.
Bake
- Bake for 10 to 15 minutes, until the tortillas are golden brown and the cheese inside is melted.
- Let the burritos rest for a minute, then serve warm with sour cream on the side.
