  • 4 large large flour tortillas
  • 1 cup cooked and seasoned ground beef See note about cooking from raw.
  • 2 cups crispy tater tots About one standard bag, cooked according to package.
  • 1 cup shredded cheddar cheese For topping.
  • 1/2 cup sour cream For serving.
Seasoning and Cooking Ingredients
  • 1 tablespoon taco seasoning
  • 1 tablespoon olive oil For cooking the beef.

Method
 

Prepare Ingredients
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment or lightly oil it.
  2. Heat the olive oil in a skillet over medium heat. Add the ground beef and season lightly with salt and pepper. Cook, breaking it up, until fully browned.
  3. Stir in the taco seasoning plus a splash of water. Simmer for 1 to 2 minutes so the flavors combine, then remove from heat.
  4. Cook the tater tots according to the package directions until they are golden and crispy. Use the oven method if possible for best texture.
Assemble Burritos
  1. Lay one tortilla flat on a clean surface. Spoon a portion of the seasoned beef down the center. Top with a handful of crispy tater tots and a sprinkle of shredded cheddar.
  2. Fold the two side edges toward the center, then roll the tortilla tightly from the bottom so the seam is on the underside. Place seam-side down on the prepared baking sheet.
  3. Repeat the assembly with the remaining tortillas.
Bake
  1. Bake for 10 to 15 minutes, until the tortillas are golden brown and the cheese inside is melted.
  2. Let the burritos rest for a minute, then serve warm with sour cream on the side.

Notes

Cool to room temperature then refrigerate within two hours. Store in an airtight container or wrap individually in foil or plastic wrap for up to 3 to 4 days.
