- Heat a large skillet over medium heat and add the olive oil.
- Add the chopped onion and minced garlic. Sauté until the onion becomes translucent and fragrant, about 3 to 4 minutes.
Cooking
- Add the ground turkey. Break it up with a spoon and cook until evenly browned and no longer pink, about 6 to 8 minutes.
- Stir in the diced potatoes, paprika, salt, and black pepper. Mix so the potatoes are well coated.
- If desired, pour in the chicken broth for added moisture.
- Cover the skillet and reduce heat to medium-low. Cook for 15 to 20 minutes, checking and stirring once or twice, until the potatoes are fork-tender.
- Remove the lid, taste and adjust seasoning as needed. Sprinkle chopped parsley before serving.
