  • 2 medium sweet potatoes, peeled and cut into 1/2-inch cubes Cut into uniform cubes for even roasting

  • 1 tablespoon unsalted butter or olive oil For the sauce base

Preparation
  1. Preheat the oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.
  2. Slice the sausage into 1/2-inch rounds. Peel and cut the sweet potatoes into 1/2-inch cubes. Chop broccoli into 1/2-inch florets.
Combining Ingredients
  1. Spread the sausage, sweet potatoes, and broccoli in a single layer across the prepared pan. Give each piece a little space so air can circulate and edges can caramelize.
Making the Sauce
  1. In a small saucepan, melt the butter or warm the olive oil over medium heat. Add the minced garlic and cook for 30 to 60 seconds until fragrant but not browned.
  2. Stir in the honey, soy sauce, and apple cider vinegar. Season with kosher salt and black pepper. Simmer for 2 to 3 minutes until the sauce thickens slightly.
Roasting
  1. Pour the sauce over the sausage and vegetables. Use tongs to toss everything until well coated.
  2. Roast for 25 to 30 minutes, stirring once halfway through. The sweet potatoes should be tender and edges lightly browned. Ensure internal temperature of raw sausage reaches 165°F (74°C).
Serving
  1. Remove from the oven, sprinkle with minced parsley, and serve warm.
