  • 1 lb ground turkey
  • 3-4 cloves garlic, minced Use 3 for milder garlic, 4 for more punch
  • 1/4 cup honey Substitute maple syrup in a pinch
  • 1/4 cup low-sodium soy sauce Use tamari to make it gluten free
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil Optional, best added at the end
  • to taste red pepper flakes, optional
  • 2 stalks green onions, thinly sliced
  • 1 tablespoon neutral oil for sautéing Such as canola or avocado

Method
 

Preparation
  1. Mince the garlic and slice the green onions. Whisk honey, soy sauce, and rice vinegar together in a small bowl.
Cooking
  1. Heat a large skillet over medium-high heat and add the neutral oil.
  2. Add the ground turkey. Break it up with a spatula and let it brown undisturbed for about 2 minutes.
  3. Stir and continue cooking until there is no pink left, about 5 to 7 minutes total.
  4. Push the turkey to one side of the skillet. Add the minced garlic to the empty space and stir for 20 to 30 seconds until fragrant.
  5. Mix the garlic into the turkey. Pour the honey-soy mixture over the meat.
  6. Let the sauce simmer 2 to 3 minutes until it reduces and coats the turkey. If using, stir in sesame oil and red pepper flakes now. Taste and adjust seasoning.
  7. Remove from heat, sprinkle with sliced green onions, and let rest for a minute so the glaze can thicken. Serve immediately.

Notes

Cool leftovers within two hours and store in an airtight container in the refrigerator for 3 to 4 days. Reheat gently in a skillet over medium heat until steaming, or microwave in 30 second bursts. If freezing, place cooled turkey in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
