  • 4 pieces boneless, skinless chicken breasts
  • 1 cup mayonnaise or plain Greek yogurt Use full-fat yogurt for best texture.
  • 1/2 cup grated Parmesan cheese Freshly grated Parmesan melts and browns more evenly.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika or Italian seasoning Optional for added flavor.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Place a chicken breast between two sheets of plastic wrap and pound gently to an even thickness of about 3/4 inch. Repeat with remaining breasts.
  3. In a medium bowl, whisk the mayonnaise or yogurt with the Parmesan, garlic powder, onion powder, salt, and black pepper until smooth.
  4. Spread a generous layer of the mixture over the top of each chicken breast so the surface is well coated.
  5. Arrange the coated breasts in the prepared baking dish. Sprinkle optional paprika or Italian seasoning over them if using.
Cooking
  1. Bake uncovered for 35 to 45 minutes, until an instant-read thermometer inserted into the thickest part registers 165°F (74°C) and juices run clear. The top should be golden.
  2. Remove from the oven and let the chicken rest for 5 minutes before slicing and serving.

Notes
