Preparation
- Preheat your oven to 375°F.
- Set up three shallow dishes: Put flour in the first, whisk eggs and milk in the second, and combine breadcrumbs, half of the Parmesan, Italian seasoning, salt, and pepper in the third.
- Pound each chicken breast to about 1/2 inch thickness between plastic wrap or in a zip-top bag.
Dredging and Searing
- Dredge each breast in flour, shaking off excess. Dip into egg mixture, letting excess drip back. Press into breadcrumb mixture until well coated.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken for 3 to 4 minutes per side until golden brown, working in batches if necessary.
Baking
- Transfer browned chicken to a baking dish. Mix remaining Parmesan with mozzarella and minced garlic, then sprinkle evenly over each breast.
- Bake for 20 to 25 minutes until cheese is melted and chicken is cooked through (internal temperature should reach 165°F).
- Remove from oven and let rest for 5 minutes before serving.

Notes
For best results, use low-moisture mozzarella to prevent excess water. Can substitute breadcrumbs and flour for gluten-free options. If the topping browns too quickly, tent with foil.
