  • 1.5 lbs boneless skinless chicken tenders Can substitute with chicken breast
  • 1 lb baby carrots
  • 1.5 lbs Yukon gold potatoes, cut into wedges
  • 0.5 cup salted butter, melted Can be substituted with olive oil for a lighter version
  • 1 Tbsp minced garlic
  • to taste Salt and pepper Adjust to preference
Herbs and Spices
  • 1 tsp dried thyme leaves
  • 1 tsp dried parsley Fresh herbs can also be used

Method
 

Preparation
  1. Place the chicken tenders in the center of your slow cooker.
  2. Arrange the potato wedges on one side of the chicken.
  3. Scatter the baby carrots on the other side.
  4. In a mixing bowl, combine melted butter, minced garlic, salt, pepper, thyme, and parsley.
  5. Stir until well mixed, then pour it evenly over the chicken and vegetables.
  6. Cover the slow cooker, and set it to HIGH for 4 hours or LOW for 6 to 8 hours.
  7. Once cooked, serve hot with your favorite sides.
