  • 2 large large sweet potatoes Peeled and cut into sticks
  • 2 tablespoons olive oil Or another high-heat oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika Use smoked paprika for a smokier flavor
  • 1 teaspoon salt Or to taste
  • 1/2 teaspoon black pepper

Preparation
  1. Preheat your oven to 425°F (220°C) and place a rack in the middle position.
  2. Wash and peel the sweet potatoes, then cut them into even sticks about 1/4 to 1/2 inch thick.
Cooking
  1. In a large bowl, toss the cut fries with olive oil, garlic powder, paprika, salt, and black pepper until evenly coated.
  2. Spread the fries in a single layer on a rimmed baking sheet, leaving space for air circulation.
  3. Bake for 12 to 15 minutes, then flip each fry with a spatula to ensure even browning.
  4. Return the pan to the oven and bake for another 12 to 15 minutes, or until the edges are golden and the centers are tender.
  5. Remove the sheet from the oven and serve the fries hot.
